Slow cooked pulled Pork Chops

It's summer and non of us like to spend more time than we have to in a hot kitchen. Let's face it, we want to be outside enjoying the great summer weather before old man winter once again, rears his ugly face!
We also want our meals to be healthy & tasty and I believe I've come up with a simple meal that meets both of these goals. Firts the meat portion of this delight:
SLOW COOKED PULLED PORK CHOPS
I found a special on some meaty pork chops at my local Kroger's market. I pulled out the slow cooker & sprayed the bowl. I cut the bone off the chops & trimmed most of the fat. I left just a bit to add some flavor then rubbed them with my Pork Rub. Next I placed them in the cooker and added a tablespoon of my Taco seasoning and sprinkled it over the meat. I then added a 1/4 cup of my lovely wife's homemade salsa which like my rubs, is sugar & salt free, then placed the lid on and set the cooker to low.
I cooked them for 12 1/2 hrs till I could pull them apart with a fork and removed the bones. I then placed them back in the bowl, stirred them to blend the sauce and served them on whole wheat tortillas with some Mexican blend cheese and lettuce.
SALAD WITH LEMON JUICE DRESSING
My wife & I take part in the 'Move' program throught the VA. This program is a free program the VA uses to help Veterans control their weight to live healthier. They offer some meal suggestions for healthy living and they suggested a Lemon/Olive Oil dressing. I looked it over and felt it needed a bit of pizazz so I made a small modification I believe you'll like. I blended a 1/4 cup of olive oil with a 1/4 cup of lemon juice and added 1 TBSP of my Old-Soldier Salad seasoning. It's a great simple recipe without an sugar or salt. I tossed together spinach, walnuts, raisins, mushrooms, grape tomatoes, & some sweet peppers then drizzled the dressing on. I think you'll like it.
