I used my Old-Soldier Coffee Infused Mexican Poultry/Seafood Rub and on the salad wedge and peas my Old-Soldier Coffee Infused Salad Seasoning. This meal is gluten - sugar - salt free so should work for those with a gluten or diabetes issue.
